Gyoda Fry (行田フライ, Gyoda furai) is a regional specialty originating from Gyoda City in Saitama Prefecture. This dish, similar to okonomiyaki, is made by dissolving flour in water and cooking it on a griddle. Despite its name, it is not a fried dish but rather a griddle-cooked dish. The name "Fry" may have various origins, such as being derived from "Nunokoi (布来)," referring to Gyoda’s thriving textile industry, or from the fact that it was initially cooked in a frying pan.

The dish consists of a thinly spread batter made from flour, topped with pork or finely chopped green onions, and finished with a sauce made from soy sauce and mirin. Though made from simple ingredients, its appeal lies in the contrast between the crispy surface and the fluffy texture of the batter. Within Gyoda City, many "Fry shops" serve this beloved treat, cherished not only by locals but also by tourists. Affordable and filling, Gyoda Fry became a popular snack among women working at sock factories during the early Showa period.
