Katsuo no Tataki (鰹のたたき) hails from Makurazaki City, located at the southernmost tip of the Satsuma Peninsula. This town, blessed with abundant natural beauty, owes its thriving ecosystem to nutrients carried by rivers from the forests of Mount Kurata into the East China Sea. This nutrient-rich environment supports a food chain where phytoplankton feed zooplankton, which are eaten by small fish, and ultimately by the bonito that flourish here, nurtured by the forces of nature. The bonito used for sashimi and tataki are traditionally caught one at a time with a single-line fishing method. They are quickly frozen onboard the fishing vessels while still alive, stored at an ultra-cold temperature of -50°C, and brought to Makurazaki Harbor while preserving their unmatched freshness.
