Komatsu Udon
A specialty cherished since the Edo period, beloved even by Matsuo Basho
О Komatsu Udon
Komatsu Udon (小松うどん) is a famous dish from Komatsu with over 300 years of history and tradition. It is said that even the legendary poet Matsuo Basho enjoyed it. During the Edo period, it was presented to the Kaga Domain and sent as a special delicacy to the shogunate and feudal lords.
The noodles of Komatsu Udon are thin with a pleasant firmness, made using the pure spring water from Mount Hakusan. The light and refreshing broth, crafted from fish flakes and kombu seaweed, harmonizes perfectly with the silky texture and delightful chewiness of the noodles. This combination creates a dish that is both simple and exquisite.
