Amenoio Rice (アメノイオご飯, Masumeshi) is a traditional dish featuring the Biwa Trout, a unique species native to Lake Biwa that spawns in the autumn. This rice dish is prepared by cooking rice together with an entire trout. Traditionally, it was made in large pots during gatherings to serve many people.

Once the rice is cooked, the fish's meat and roe are mixed into the rice, and the dish is topped with finely chopped green onions for added flavor. Depending on the region—be it Koto, Kosai, Kohoku, or Konan—there are variations in ingredients and preparation methods. Nowadays, a popular method involves cooking the rice with trout fillets instead of a whole fish. Frozen fillets are also used to prepare this dish throughout the year, not just in autumn.

The Biwa Trout is considered a rare and elusive fish, and this dish was created as a way to enjoy its lean and flavorful autumn variant. In 1998, Amenoio Rice was designated as an intangible cultural heritage of Shiga Prefecture.
