Zaru Tofu (ざる豆腐, zaru tōfu) is a traditional specialty from Karatsu City, Saga Prefecture, crafted by the renowned Kawashima Tofu Shop, which has been in operation since the Edo Period. Founded during the Kansei era (1789–1801), the shop holds a prestigious history of presenting its tofu to the Karatsu domain lords. The ninth-generation owner perfected a method that preserves the natural flavor of soybeans without rinsing them in water, ultimately resulting in the creation of Zaru Tofu. This method produces tofu with a creamy, cheese-like texture and a rich, full-bodied taste, earning widespread acclaim beyond the local region. The main ingredient, soybeans, is highly valued for its exceptional nutritional benefits. It is particularly rich in protein, which is essential for maintaining muscle and organ health.
