Sour tofu
Originating in Karatsu, Saga Prefecture, zaru tofu — a superb dish with the ultimate flavor of soybeans, with a smooth texture!Sour tofu introduction
“Zaru Tofu” from Karatsu City, Saga Prefecture is an excellent product invented by the long-established “Kawashima Tofu Shop,” which has continued since the Edo period. The store, which was founded during the Kansei era (1789 to 1801), has a history of presenting tofu to the lord of the Karatsu Domain at the time. The 9th head of the family pursued a manufacturing method that makes use of the original flavor of soybeans without exposing them to water, and created “sifted tofu.” Using this manufacturing method, tofu, which is characterized by its smoothness and richness like cheese, has been completed, and has received high praise not only locally but also nationwide. Soy, which is the main ingredient, has extremely high nutritional value and is attracting attention as a health food. In particular, it is rich in protein and contains many ingredients essential for maintaining the muscles and organs that make up the body. It also contains calcium, which strengthens bones, and is an ideal food for growing children and the elderly who are concerned about osteoporosis. Furthermore, soybeans also contain dietary fiber and isoflavones, which have the function of regulating the intestinal environment and supporting hormonal balance. Of course, you can enjoy zaru tofu as it is, and by combining it with soy sauce and condiments, the flavor is enhanced even more. Also, the smooth texture and rich flavor go great with Japanese sake. In particular, refreshing types of Japanese sake, such as junmaishu and ginjoshu, further enhance the umami of zaru tofu. Within Saga prefecture, there are many restaurants and direct sales places that serve grated tofu, and it is a popular dish among tourists. In particular, “Tofu Cuisine Kawashima” in Karatsu City is popular for being able to enjoy freshly made grated tofu. Be sure to visit Saga Prefecture and enjoy the pairing of authentic zaru tofu and Japanese sake.
