Kanazawa City is home to a recognized brand of vegetables known as "Kaga Vegetables," with Kaga Lotus Root being one of the most historic varieties, cultivated since the feudal era.
This lotus root is distinguished by its short segments, with the two terminal segments being especially prized for their exceptional flavor. Its thick, meaty texture and satisfying crunch have earned it the nickname "Mochi Lotus Root" for its high starch content.
The strong stickiness of grated Kaga lotus root has been utilized for ages in the preparation of a traditional local dish called "Hasu Mushi (はす蒸し)." Hasu Mushi is a steamed dish made by grating Kaga lotus root, mixing it with various ingredients, and gently steaming it to create a comforting, flavorful delicacy.
