About Abura-fu (Sendai Fu)
Abura-fu (油麩, also known as Sendai Fu) is a unique wheat gluten product deep-fried to create its distinctive texture. It is made by kneading gluten, a type of protein found in wheat flour, into a cylindrical shape and frying it in cooking oil. During frying, each piece puffs up, and careful cuts are made along the length to control its shape, resulting in an elegant, elongated form.
While typically added to soups and stews such as miso soup, in Tome Town of Miyagi Prefecture, Abura-fu is famously enjoyed as "Abura-fu Don" – a rice bowl topped with this deliciously tender and flavorful ingredient. It's a beloved specialty of the region, perfect for those seeking a filling, meat-free option.
