“Saga ramen” is a local ramen offered mainly in Saga City, Saga Prefecture, and while inheriting the tradition of Kyushu tonkotsu ramen, it has unique characteristics. Although it has its roots in Kurume ramen, Saga ramen is characterized by a style where slightly thick straight noodles are softly boiled, and a light tonkotsu soup with low salt and fat content. Another major characteristic of Saga ramen is the “raw egg (egg yolk)” topping. Many stores only use egg yolk as a topping, which adds mellowness and depth to the soup. Ramen with raw eggs is offered under the menu names “special made” and “deluxe,” which has continued since the Showa era, and makes you feel special. You can also enjoy toppings unique to the local area, such as Saga nori and pork.
