About Boiled ara

Karatsu Kunchi is the annual autumn festival of Karatsu Shrine in Karatsu City, Saga Prefecture, and it is a grand festival with gratitude for the harvest. While men from the town of Karatsu participate in festivals since ancient times, there is a custom that women who protect their homes serve food to people who are indebted to them on a daily basis. The dish is called a “kunchi dish,” and the one that catches the eye is the huge fish “Ara no Katani”. Cooking is different depending on the house, but it is very large, and even small ones lightly exceed 60 centimeters. Fill with daikon radish or boiled eggs and simmer slowly with 10 bottles of soy sauce and 10 bottles of sake for about a day. When it comes to simmering, ordinary large pots cannot compete with them, so each household makes a custom-made large pot like an iron ship, and then boils it and cooks it.
