Hinai Jidori Yakitori introduction
Hinai Jidori Yakitori (比内地鶏焼き鳥, Hinai Jidori yakitori) is made from the prized Hinai Jidori, a renowned chicken breed from northern Akita Prefecture. This region's fertile lands and pristine natural environment provide ideal conditions for free-range farming. Under Akita's certification system, each chicken is given 1 to 1.5 tsubo (around 3.3 to 5 square meters) of space and is raised over 150 days, basking in sunlight, breathing fresh air, and drinking pure water. Thanks to this stress-free, active lifestyle, Hinai Jidori develops firm, reddish meat with a satisfying chew. When used to prepare stock, its meat releases delicate fat that creates a unique richness and depth of flavor, accompanied by its distinctive aroma. Additionally, the cool climate contributes to thicker, flavorful skin, which contains a rich layer of fat. The chicken fat is packed with arachidonic acid, a compound known to enhance the overall taste, making Hinai Jidori truly exceptional.
