Towada barayaki

About Towada barayaki
The local gourmet “Towada barayaki” from Towada City, Aomori Prefecture is representative of B-grade gourmet food loved locally. The characteristic of this dish is that a large amount of onions and beef ribs are mixed with a sweet and spicy sauce based on soy sauce and grilled on an iron plate until the water is gone.
It is said that it originated in 1958 at a food stall in front of the US military's Misawa base, and what was initially offered to American soldiers gradually spread to local residents, and it became established as a home-cooked meal.
Beef ribs, which are the main ingredients, contain just the right amount of fat and are characterized by their rich flavor. Onions from Aomori prefecture are used, and their sweetness enhances the overall flavor of the dish. Also, garlic, a specialty of Aomori, is used in the sauce, and the finish is rich in flavor.
In terms of nutrition, you can get good protein and iron from beef ribs, and vitamin C and dietary fiber from onions. In particular, allicin contained in garlic is said to contribute to recovering from fatigue and improving immunity.
“Towada barayaki” is offered at local events and fairs, and plays a part in regional revitalization. Furthermore, it has been certified as “SAVOR JAPAN” by the Ministry of Agriculture, Forestry and Fisheries, and is actively disseminating information overseas.
This dish goes well with rich junmaishu and ginjoshu, which has a light acidity. By all means, when you visit Aomori Prefecture, enjoy pairing “Towada barayaki” with local sake.
