Mitane in Akita Prefecture is known as the number one producer of junsai in Japan. Junsai is a perennial aquatic plant in the water lily family. It grows naturally in clean swamps and ponds, and is harvested from early summer to summer. In Mitane, in particular, harvesting is carried out from May to August, and June and July are at their peak.

What is edible are young shoots and petioles wrapped in transparent jelly-like slime, and this slime contains a lot of acidic polysaccharides. Junsai is characterized by its smooth texture and unique texture, and has been prized in Japanese cuisine since ancient times.

In terms of nutrition, while junsai is low in calories, it contains dietary fiber, vitamin K, potassium, etc., and is attracting attention as a healthy food.
