Junsai is a perennial aquatic plant that floats leaves on the surface of water, like water lilies. Eat shoots that are under the water. It is covered in a jelly-like slump and features a smooth throat and purupuru texture. The agar-agar-covered chewy texture and the smooth texture of young shoots are prized as ingredients of Japanese cuisine. Junsai is the best produced in Akita Prefecture's local cuisine in Japan, and is used for vinegar and soup.
