Instead of the typical pickled red ginger, it is accompanied by a side of chopped fukujinzuke pickle, adding a distinct twist.
This dish traces its origins back to the years immediately following World War II. A local okonomiyaki shop collaborated with a noodle manufacturer in Yokote to create this yakisoba in its current form. By around 1953, this flavorful and affordable dish gained immense popularity and became a staple offered throughout the city.
