Nozawana Pickles introduction
In Shinshu, there’s a saying: "Snow, a warm kotatsu, and pickled greens." Nozawana (野沢菜漬け, Nozawana tsukemono) is a local vegetable grown in the fertile lands nourished by mineral-rich snowmelt and the drastic temperature shifts between day and night, which give it its natural sweetness and refreshing crispness. The colder the weather and water, the softer and more delicious it becomes. Beloved by the people of Shinshu for generations, this iconic pickled dish represents the comforting taste of home.
