As it is said to be “snow, kotatsu and leaf pickling in Shinshu”, this mineral-rich snow melting water and cold difference between day and night is sweet, Mizumizu Nozawana, which makes shishisai, has been familiar with Shinshu people since ancient times. The colder and the lower the water temperature, the softer and tastier it will be. It is a typical taste of hometown and omukuro flavor.
