About Ajino Maru

Fish mackerel has been popular since ancient times in Saiki City, located in the southeastern part of Oita Prefecture. Bungo Water, which has beautiful water quality, is filled with warm currents of Kuroshio from south to north and cold currents from the Seto Inland Sea collide with abundant fish food. The horse mackerel that grew up on Bungo Water was reputed to be greasy and tasteful. Since it is landed in large quantities, it is used for various local dishes and processed products. In 2007, horse mackerel was certified as “City Fish”.
One of the local dishes using horse mackerel is “Ajino Maruzushi”. Red shiso is wrapped in a plum pickled horse mackerel. It is characterized by the use of whole horse mackerel. Because we use shiso, we'll save it too.
