Gomadashi is a flavorful paste made by mixing the flaked grilled meat of "Eso," a fish caught year-round in the area's coastal waters, with mirin, soy sauce, sugar, and a generous amount of sesame seeds. In Oita, it’s commonly enjoyed by stirring it into udon noodles.
