Pickled Vegetable Steak (漬物ステーキ, Tsukemono steak) is a traditional dish from the Hida region of Gifu Prefecture. While pickles are typically eaten as-is, in Hida Takayama, they are transformed by grilling or frying.
The dish is said to have originated as a way to thaw frozen pickles during the cold winters or to make overly sour pickles more enjoyable. Stir-fried pickles are finished with a layer of beaten egg and topped with flavorful extras like bonito flakes and green onions. This creates a savory, slightly sweet dish that’s incredibly appetizing.
Now a local specialty, Pickled Vegetable Steak has become a favorite among visitors exploring Hida’s culinary traditions.
