In Karatsu Port, the gateway to the sea in Saga Prefecture, autumn marks the season when fresh, fatty barracuda are brought ashore.
Among Karatsu's barracudas, the plump and particularly fatty ones with thick, silver-shimmering backs are known as "Gin-Kamasu" (Silver Barracuda).
While often enjoyed as dried fish, they are also delicious prepared as sashimi, grilled with salt, fried, or simmered. If you visit Karatsu in autumn, tasting this versatile seasonal delicacy is an absolute must!
