About Kitauura Nada Aji
Kitauura Nada Aji (北浦灘アジ, Kitauura Nada Aji) is a prized horse mackerel caught in the turbulent waters of Hyuga Nada, known as one of Japan’s most rugged seascapes. Using a method called purse seine fishing, the fish are brought to shore without any human contact, ensuring a pristine catch.
After being caught, the horse mackerel are carefully nurtured for over a week without feeding, allowing the fat to redistribute evenly throughout their bodies, giving the fish an exceptionally mild and rich flavor. Each fish must weigh at least 100 grams and is shipped only after being expertly prepared using the ikejime method, which preserves its freshness and quality.
This meticulous process delivers a consistently high-grade, fresh, and tender horse mackerel that is rich in flavor and truly delicious.
