Marinated Salmon Roe in Soy Sauce (いくらの醤油漬け, Ikura no Shoyu-zuke) is one of Hokkaido’s most famous seafood delicacies, loved by people of all ages across Japan.
During September to October, the peak season for salmon fishing, supermarkets are filled with fresh sacs of salmon eggs, and many families take part in preparing their own marinated salmon roe. There are two common ways to season the roe—salt curing and soy sauce marination—but the soy sauce variety is particularly popular in homemade recipes. This dish is a true taste of autumn in Hokkaido.
