About Go Tofu
Unlike regular tofu, which is made by curdling soy milk with a coagulant, Go Tofu (呉豆腐) is prepared by mixing soy milk with kudzu starch or other types of starch, then heating it until it thickens. Its unique texture is soft and chewy, reminiscent of silky pudding. The richness of soybeans gently unfolds in your mouth with every bite, thanks to its natural stickiness.
Go Tofu pairs wonderfully with Kyushu’s characteristic sweet soy sauce. The most common way to enjoy it is topped with a slightly sweet sesame-based soy sauce made with ground sesame seeds, sugar, and soy sauce. Other serving styles include wasabi soy sauce, tempura-battered forms, or even drizzling with black sugar syrup for a dessert-like twist. Versatile and adaptable, Go Tofu complements any accompanying ingredients beautifully.
