About Omi Champon
Omi Champon (近江ちゃんぽん) was created at our restaurant over half a century ago, and since then, it has become a beloved staple throughout Shiga Prefecture, especially in Hikone. It’s often referred to as the "soul food of Shiga."
The soup features a Japanese-style soy sauce base inspired by Kyoto-style dashi, giving it a gentle and refined flavor. The noodles are Chinese-style, made with kansui (alkaline water), ensuring a satisfying texture. The toppings are generous but simple, including only pork and vegetables. The rich yet light and soothing broth is what makes this dish truly special.
