About Goshiki Somen (Five-color hand-stretched noodles)
Goshiki Somen is a specialty of Matsuyama that has been enjoyed since the Edo period.
Made by hand-stretching carefully selected wheat flour, these firm noodles come in five colors—brown, green, red, yellow, and white—without artificial coloring. Barley, matcha, plum, and mandarin orange are kneaded into the noodles to create their colors.
Their beautiful appearance also makes them a popular gift.
