About Noppei Udon
Noppei Udon (のっぺいうどん, Noppei udon) is a comforting bowl of udon noodles topped with a thick, velvety ankake sauce infused with the fragrant spice of ginger. The dish features a variety of ingredients such as yuba (tofu skin), shiitake mushrooms, and seasonal vegetables, all harmoniously combined in the savory, glossy broth.
The name "Noppei Udon" is said to come from the unique, smooth and slightly sticky texture of the ankake sauce, which gives it a "noppei" (slippery and thickened) quality.
Cherished during winter for its warmth, it's also enjoyed in summer to ward off the chill of the breeze coming from Lake Biwa. This versatile dish brings comfort in every season.
