Sea Bream Chazuke Ureshino (鯛茶漬け うれしの, Tai Chazuke Ureshino) is a traditional family recipe passed down since the Edo period at Wakaeya.

This dish features fresh slices of sea bream marinated in a secret sesame-based sauce, placed delicately over steaming rice, and finished with a pour of hot Kitsuki tea. The name "Ureshino" comes from a historical moment when a lord of the Kitsuki Domain was so delighted after tasting this dish that he exclaimed, "Ureshii no" ("I'm so happy!").

The recipe remains unwritten, as the signature sauce is a closely guarded family secret, handed down through generations. Its simplicity highlights the perfection of timing and seasoning, bringing out the true essence of tradition.
