About Uzume-Meshi
Uzume-Meshi (うずめ飯, uzume-meshi) is a traditional dish from the Iwami region of Shimane Prefecture, characterized by its unique presentation where the toppings are hidden beneath a layer of rice. Ingredients such as tofu, kamaboko (fish cake), carrots, and shiitake mushrooms are concealed, with a light clear soup and a hint of wasabi adding the final touch.
At first glance, it may look like a simple ochazuke (tea over rice), but as you eat, the hidden ingredients are revealed, offering a delightful and surprising flavor experience. Its origin is said to reflect either efforts to avoid showing extravagance to others or the frugality encouraged during the Edo period. Interestingly, in 1939, Uzume-Meshi was selected as one of Japan’s "Five Great Local Rice Dishes" in a national culinary survey.
