About Kurumi Soba (Soba noodles with walnut dipping sauce)
The Chichibu region of Saitama Prefecture is home to many excellent soba restaurants, and quite a few serve kurumi soba. Its walnut dipping sauce is richly seasoned yet mellow and fragrant, offering a different taste from regular soba. The soba-yu (the hot water used to cook the noodles) is especially delicious with it, too.
