About Dotoyaki
Doteyaki is a staple dish of Osaka Shinsekai, which is stewed for a long time in miso and Mirin. Now, along with skewers, is a staple dish of Osaka Shinsekai.
It seems that it was called Dote-yaki or Dotenabe because it was surrounded by miso banks and stewed in melted broth.
Boiled beef tendon is skewered and stewed in a soup stock containing miso and sugar for a long time. Just before eating, you can add shichimi, Japanese pepper, and green onions as you like.
