Iwakuni Sushi (岩国寿司, Iwakuni zushi) is a pressed sushi dish originating from Iwakuni City in Yamaguchi Prefecture.
It earned the nickname "Lord's Sushi" as it was customarily brought along when ascending to Iwakuni Castle. This sushi is made in a truly unique way—not portioned individually but crafted in a bold style, cooking 4 to 5 sho (large quantities) of rice at once and layering it with toppings in a large wooden frame.
