About Natural Eel (wild-caught eel)
Wild eel is caught in the Mikata Five Lakes area of Wakasa, Fukui Prefecture. Eel from the lakes is also known as kuchiboso-aunagi (“slender-mouthed blue eel”). It has a slightly tapered shape from the pectoral fins toward the snout and a bluish back. Its flesh is thick and rich with fat, with a flavor that melts in your mouth.
