About Togakushi Soba
Togakushi Soba (戸隠そば, Togakushi soba) refers to soba noodles from Togakushi, located in Nagano City, Nagano Prefecture (formerly Togakushi Village). It is celebrated as one of Japan’s top three soba varieties, alongside Wanko Soba from Iwate Prefecture and Izumo Soba from Shimane Prefecture.
A distinctive feature of Togakushi Soba is the use of "hikigurumi" soba flour, made by grinding buckwheat after removing only the husk. The dough is rolled out into a circular shape using a single rolling pin, creating exquisite noodles. Because the flour retains its outer layer, the noodles have a slightly darker appearance and an intense, aromatic buckwheat flavor that shines with every bite.
