The cold noodles of Yamanashi Prefecture's local dish “Hoto” are called “Ozara”. Chilled noodles about the thickness between hoto and hiyugi are eaten in warm broth. Otsuyu is a soy sauce flavor with lots of ingredients such as shredded carrots, onions, shiitake mushrooms, and deep-fried tofu. Add liquor, sugar, soy sauce, etc. to the dashi soup taken in niboshi and add it to your favorite taste.
