About Ozara
Ozara (おざら) is a chilled noodle dish that originates from Yamanashi Prefecture and is closely related to the local specialty, hoto. The noodles are slightly thinner than those in hoto, resembling a size between hoto and somen, and they are served cold. You dip the cooled noodles into a warm, flavorful soy-based broth filled with ingredients like julienned carrots, onions, shiitake mushrooms, and fried tofu. The broth is made by combining a base stock, such as one from dried sardines, with sake, sugar, soy sauce, and other seasonings to create a taste that can be customized to your liking.
