Mushi Sushi (蒸し寿司, Mushi sushi) is a beloved specialty of Matsue, a warm sushi dish where seasoned rice is topped with various ingredients and gently steamed.

The dish features vinegared rice mixed with bamboo shoots and shiitake mushrooms, adorned with an abundance of toppings such as shrimp, eel, slow-cooked beef, candied chestnuts, shredded egg, and fish cakes. It is then steamed in a seiro (traditional bamboo steamer), allowing the flavors to deeply infuse and creating a fluffy texture.

Mushi Sushi is especially popular during the winter season in Matsue and is said to have originated from the wife of the first owner of "Naniwa Sushi." This dish incorporates the Kansai tradition of warming sushi in bamboo steamers, expertly adapted to modern tastes with meticulous care by skilled chefs. Today, Mushi Sushi stands as one of Matsue’s most iconic culinary delights.
