Uzume Meshi (うずめ飯, Uzume meshi) is a traditional dish from the Iwami region of Shimane Prefecture, known for its unique presentation where ingredients are hidden beneath a layer of rice.
Underneath the rice, you'll uncover treasures like tofu, kamaboko (fish cake), carrots, and shiitake mushrooms. It is served with a light, clear broth and a touch of wasabi for added flavor. At first glance, it resembles ochazuke (tea over rice), but as you dig in, the hidden ingredients emerge, offering an exciting and flavorful experience.
The origins of this dish are thought to reflect the values of modesty and frugality during the Edo period, where people avoided showcasing luxury. Uzume Meshi was also recognized as one of Japan’s “Five Great Local Rice Dishes” in a nationwide survey of regional cuisine in 1939.
