The Omelette Rice of Hodatsushimizu (宝達志水オムライス) is a new local specialty inspired by the birthplace of Shigeo Kitahashi, the French cuisine chef who created "omelette rice" during the Taisho era, and the founder of Hokkyokusei, a restaurant in Osaka.
Shigeo Kitahashi opened a Western-style restaurant in Osaka called "Panya" (now Hokkyokusei) and served a unique dish that combined an omelet with tomato ketchup rice to his regular customers, which marked the origin of omelette rice.
In Hodatsushimizu Town, Ishikawa Prefecture, the "Omelette Rice Town" project started in 2011. The town has been actively promoting this dish through offering original omelette rice creations at local restaurants, hosting omelette rice events, and involving the community to establish Hodatsushimizu as a home for omelette rice enthusiasts.
