Hasu Mushi
A lucky dish symbolizing a "clear vision of the future"
เกี่ยวกับ Hasu Mushi
Kanazawa City is known for its branded vegetables called "Kaga Yasai," among which Kaga Renkon (加賀れんこん, Kaga lotus root) stands out as a vegetable with a long history of cultivation dating back to the feudal era.
Kaga Renkon is characterized by its short spacing between nodes, with the top two nodes considered the tastiest. It has a thick and satisfying texture with a crisp bite, earning it the nickname "Mochi Renkon" (もちれんこん, sticky lotus root) thanks to its high starch content.
The grated root has a strong stickiness, which has been utilized to create the traditional local dish, Hasu Mushi (はす蒸し). This comforting dish is made by grating Kaga Renkon, mixing it with various ingredients, and steaming it to perfection.
