Ryukyu (りゅうきゅう) is a traditional dish from Oita Prefecture, located along the Seto Inland Sea, known for its abundance of fresh seafood. This dish features sashimi-style slices of fresh fish like horse mackerel, mackerel, yellowtail, and amberjack, marinated in a savory sauce made from soy sauce, sake, mirin, ginger, sesame seeds, and other seasonings. It is often garnished with green onions and wasabi, though the recipes can vary depending on the chef.
Unlike regular sashimi, its unique preparation results in a smooth, slightly rich texture that sets it apart. Historically, Ryukyu was also enjoyed as a type of preserved food, deeply rooted in local culinary traditions. The name is thought to have originated either from the fishermen of "Ryukyu" (Okinawa) who brought the method, or from "Rikyu-ae," a sesame-based seasoning style. Whatever the origin, this dish is a true testament to the flavorful heritage of Oita.
