About Lettuce Roll
The Lettuce Roll (レタス巻き, Retasu maki) originated in 1966 at the renowned sushi restaurant "Ippei" in Miyazaki City. It was created by the founder, Shoji Muraoka, as a special dish for his friend, musician Masaaki Hirao.
Inspired by the concept of “creating sushi that makes vegetables delicious and healthy,” Muraoka experimented tirelessly to perfect this unique dish. The combination of vinegared rice, plump shrimp, crisp lettuce, and a specially developed mayonnaise sauce results in a delightful mix of textures and flavors. The juicy, succulent shrimp, the crisp crunch of fresh lettuce, and the tangy yet creamy touch of the mayonnaise sauce make this sushi both innovative and irresistible.
Today, the Lettuce Roll is celebrated as one of Miyazaki's beloved local specialties.
