Miyazaki Prefecture is blessed with ideal conditions for producing natural log-grown shiitake mushrooms (原木しいたけ). These include abundant kunugi oak trees, pristine water, significant temperature variation between day and night, and some of the longest sunshine hours in Japan. Thanks to these factors, Miyazaki produces plump, fragrant shiitake mushrooms of exceptional quality.
This region, with its perfect soil and climate for mushroom cultivation, ranks second in Japan for dried shiitake production, following Oita Prefecture. Miyazaki's dried shiitake mushrooms are particularly rich in trehalose, a natural sugar that provides a mild sweetness and a satisfying, chewy texture. With their wonderful umami flavor, aroma, and texture, they have gained fans across the country.
