“Ohataki no Nikumaki,” a soul food from the Enshu region, is a dish made by wrapping “ohataki,” which has been handed down since the Edo period, wrapped in pork and grilled with a sweet and spicy sauce. “Ohataki” is a rice mochi made from “non-glutinous rice,” and it is said that the name comes from the fact that rice is made into flour “batter.” In the past, it was made from wasu rice, so it was dark, but now it is made from selected non-glutinous rice, and the texture is smooth. Its characteristics are that it doesn't stretch, doesn't harden even when cooled, and can't be stewed, etc., so it is widely accepted by the elderly and children. Restaurants in the Asaba area of Fukuroi City created “Ohataki Nikumaki” in order to pass on “ohadaki” to the next generation.
