Hitsumabushi
A bowl of irresistible grilled eel topped with rich, savory sauce.
About Hitsumabushi
Hitsumabushi (ひつまぶし) is a delicious dish featuring fragrant grilled eel beautifully arranged over a bed of hot steamed rice in a wooden serving container called "ohitsu." The eel, prepared kabayaki-style and sliced into bite-sized strips, pairs perfectly with the warm rice.
This dish offers three unique ways to enjoy it: first, savor it as is to appreciate the natural flavors; second, sprinkle some condiments such as wasabi, green onion, or nori for an aromatic twist; and third, pour hot dashi broth or tea over the rice to create a comforting soup-like meal. With one serving of Hitsumabushi, you can experience three delightful flavors in one dish.
