Amenoio rice (trout rice) is cooked rice using one whole loquat trout, which is an endemic species of Lake Biwa, which reaches spawning season in the fall, and was made in a large pot when many people gathered. Once cooked, mix the fish meat and eggs with the rice and place the chopped green onions on top.
There are differences in preparation methods and ingredients between the Koto region, the Kosai region, the Kohoku region, and the Konan region, and in recent years the method of making fillets and then cooking has become popular. Also, there is a method of cooking not only in autumn, but also using fillets that have been frozen over the year.
Loquat trout is a phantom fish, and it is said to be a dish devised to eat loquat trout that has lost fat in the fall.
It was also selected as an intangible folk cultural property selected by Shiga Prefecture in Heisei 10.
