Amenoio rice (trout rice) is cooked rice using one whole loquat trout, which is an endemic species of Lake Biwa, which reaches spawning season in the fall, and was made in a large pot when many people gathered. Loquat trout is a phantom fish, and it is said to be a dish devised to eat loquat trout that has lost fat in the fall.
It was also selected as an intangible folk cultural property selected by Shiga Prefecture in Heisei 10.
