Yonezawa ramen is a local ramen representative of Yonezawa in Yamagata Prefecture, and features thin, hand-kneaded curly noodles and a light soy sauce-flavored soup. The soup is based on chicken bones and dried sardines, and the gentle flavor you won't get tired of is loved by many people. Ramen noodles are made using a “high water addition method,” and adding more water than normal creates a unique, chewy texture. Furthermore, by adding hand kneading, the noodles become frizzy and entwined well with the soup, and a cup unique to Yonezawa is completed.
Yonezawa ramen started with food stalls in the 1920s and eventually became established as a Chinese soba restaurant in the town. Along with that history, there are still over 100 ramen shops in Yonezawa city, and each store offers ingenious flavors. The traditional techniques that took time and effort and the taste that you won't get tired of eating every day continue to be supported by many people.
