About Suko Sushi
Suko Sushi (須古寿司, Suko zushi) is a traditional box-style sushi from Suko, located in Shiroishi Town, Kishima District, Saga Prefecture.
It features a base of vinegared rice mixed with glutinous rice, topped with a variety of ingredients such as shredded thin omelet, finely sliced burdock root, narazuke (pickled vegetables), fish cake, pickled ginger, shiitake mushrooms, denbu (sweetened fish flakes), mudskipper fish, shrimp, and more. The vinegared rice is layered into a wooden box called "morobuta" and cut into neat squares. Each piece is then adorned with its toppings.
This dish is said to have originated when the local people prepared it using available ingredients to express their gratitude to their feudal lord. Even today, Suko Sushi remains an integral part of celebrations and festivals in the Suko area, continuing a tradition that has been passed down for over 500 years.
