About Suko-zushi

“Suko sushi” is a sushi made with vinegared rice added with glutinous rice topped with kinshi eggs, sasagaki burdock, Narazuke, kamaboko, pickled ginger, shiitake mushrooms, denbu, mudsugoro, shrimp, etc., and is a local dish in the Suko district of Shiroishi-cho, Kishima-gun, Saga prefecture That's it. Vinegared rice is spread in a wooden box called “morobuta,” cut into squares that are easy to eat, and put the ingredients on each cut vinegared rice. It is said that it started when the people of the domain expressed their gratitude to the lord and made them with materials on the spot. In the Suko district, it is a local dish that is still indispensable for celebrations and festivals.
