About Sai Tofu
Sai Tofu (菜豆腐, Sai doufu) is a traditional dish from Shiiba Village, originally served at ceremonial events like weddings and funerals.
In spring and summer, it is adorned with bright rape blossoms or fragrant wisteria flowers, while autumn and winter bring flavors of shiitake mushrooms or yuzu citrus. The ingredients change with the seasons, allowing you to enjoy its taste and appearance year-round.
During times when soybeans were scarce, local ingenuity led to the addition of vegetables to make the tofu larger and more satisfying.
