The paste “Akaten,” which is the soul food of Hamada City and became a specialty representing Shimane Prefecture, was developed during the post-war food shortage period. It is a unique kamaboko that features a red cross section, is finished spicy with red pepper, and deep-fried with bread crumbs. Locally, it is standard to roast it and eat it with mayonnaise, and it is widely seen in supermarkets and izakayas in Shimane prefecture. Its popularity has spread to famous stores in Tokyo, and only a few manufacturing companies, such as the Yamamoto Kamaboko store and the Yamabumi kamaboko store, have been approved for manufacturing. It is also excellent nutritionally and is recommended for dieting.
