Dondon Yaki (どんどん焼き, Dondon yaki) is a popular street food from Yamagata's inland areas, known for its rich savory sauce and its unique presentation – rolled around disposable chopsticks for easy eating on the go.
To make Dondon Yaki, a batter made of flour and water is thinly spread into an oval or rounded-rectangle shape and cooked on a griddle. It is then topped with ingredients like seaweed flakes, aonori (green seaweed powder), and fish sausage. Once cooked, it is skillfully rolled onto one or two chopsticks, either as a single roll or in shorter strips, and brushed with a flavorful sauce, making it a delicious and portable treat.
