Botebote tea introduction
Botebote tea is a traditional snack from Matsue in Shimane prefecture, where bancha is whipped with a tea whisk and eaten by adding okawa, boiled beans, chopped koya-dofu, and pickles. It is said that the name comes from the sound of whipping tea. This food is said to have spread as a work meal for tatara iron craftsmen in Okuizumo, meals during falconry in Matsudaira Fumai, emergency food during the famine, and a drink for common people opposing chanoyu in the upper class. Even now, tourists can enjoy it at teahouses around Matsue Castle.
