About Steamed Sushi
Steamed Sushi (蒸し寿司, Mushizushi) is a beloved specialty of Matsue, made by steaming sushi rice topped with various ingredients to create a comforting, warm dish. The sushi rice, mixed with bamboo shoots and shiitake mushrooms, is topped with an array of flavorful ingredients such as shrimp, eel, simmered beef, sweet chestnuts, shredded egg, and fish cake. It's then gently steamed in a bamboo steamer, allowing the flavors to meld together beautifully while creating a soft, delicate texture.
Particularly popular during the winter months, Steamed Sushi has its origins in a recipe created by the wife of the first owner of "Naniwa Sushi" in Matsue. Inspired by the Kansai region's tradition of warming sushi in steam baskets, this dish has been lovingly reimagined with modern touches. Carefully crafted by skilled chefs, Steamed Sushi is now a proud representative of Matsue's culinary heritage.
