Bibai Yakitori introduction
Bibai Yakitori (美唄やきとり, Bibai yakitori) is a flavorful dish that originates from Bibai City, located halfway between Sapporo and Asahikawa. The western part of Bibai features lowlands that are part of the Ishikari Plains, known as one of Hokkaido’s major grain-producing regions. On the other hand, the eastern area is a mountainous region that connects to the Yubari Mountain Range. In the past, Bibai thrived as one of Japan’s leading coal mining towns, bustling with many coal miners. It is said that Bibai Yakitori was a favorite dish among these hardworking miners. Today, it remains a beloved local specialty, enjoyed by people of all ages, from children to adults, as a comforting soul food of the region.
